Recipies.

I know, this is like the fourth post I have posted today. But... my friend Koko has IBS. An eating condition where she is allergic to pretty much everything. So as she handed me her cookbook tonight for me to find something for us to cook for dinner, I flipped through the pages and found a couple recipies that caught my eye.

Tart Cranberry Lime and Honey Refresher.
1 1/2 cups cranberry juice
Juice from 1/2 lime
2 teaspoons honey
Stir ingredients together with a fork in a large glass.

Fresh Basil Omelet with Sundried Tomatoes
2 organic eggs
2 tablespoons finely chopped sundried tomatoes
1 tablespoon finely shredded basil
1 tablespoon finely diced onion
1 small clove garlic, mashed
In a small bowl, combine egg whites and tomatoes, whisking until lightly frothy. Put eggs in pan, and immedately top with other ingredients, forming a narrow line of filling across the center. When edges of the omelet are slightly crisp, carefully fold one side over the filling.

Italian Lemon Tuna Sandwich
3 tablespoons onion, finely chopped
1 medium garlic clove, minced
2 teaspoons extra virgin olive oil
Juice of one lemon
1 teaspoon dried parsley
2 teaspoons dill weed
6 oz. tuna
Salt and pepper to taste
Small bunch fresh basil
Small tomato, thinly sliced
Whisk onion, garlic, oil and lemon together, then whisk in parsley and dill. Stir in tuna and well blend. Season with salt and pepper. Assemble sandiwch with fresh basil on the bottom, tuna in the middle and tomato on top.

Simple Whitefish with Lemon and Herbs
4 whitefish fillets
4 large garlic cloves minced
1 teaspoon dried or 4 teaspoon fresh rosemary leaves crushed
1/4 teaspoon white pepper
1/4 teaspoon salt
1 tablespoon olive oil
1 large lemon, thinly sliced, seeded
Preheat oven to 450 and place baking sheet in oven to preheat as well. Cut 4 rectangles of foil, and place fish fillet in the center of each. Combine remaining ingredients except lemon and stir well, spread mixture evenly over fish, scatter lemon slices on top and fold edges of the foil over the fillet, place fish packages in oven and bake for 13-15 minutes, until fish is cooked through.

  1. hmmmm, an omelet sounds divine right now. Maybe we'll do that for dinner. I'm coming to Treasure Island tonight. Yay!
